Oh, wow! How did you learn to make hand pies? I'm very attracted to that idea, because we're empty nesters eating sugar only one day a week, so a whole pie is too much. As a kid, I loved the fried pies at McDonalds, but I'm not much of a deep fryer anymore.
LOL those burning hot McD apple pies were a thing! :-) If you can bake a regular pie, you can make little pies. The hand pies involve same rolling of dough, you just use a biscuit cutter (or you could cut squares with a knife). The other minis involved making a cookie crust and pressing into muffin tins. I love the idea of going all-in on one kind of baking! One of the ways I'm finding delight this holiday is in letting go of the expectation to produce things I don't really care about (most traditional "Christmas" cookie recipes being one) and doubling-down on the things I do love (shortbread, quick breads, bread of all sorts). Pies would be another thing to add to my eventual list of things I care deeply about - perhaps next year I'll take a page from your book and really explore all the pie-making possibilities!

I tend to get a little lost in excessive details on this recipe - for example, it uses two lines to tell you to use a pot holder to touch a lid on the dutch oven that has just been removed from a 500 degree oven lol - but, I made an amazing loaf with it, despite my beginner-level skills, and am going back for round 2 this week.
I am so curious about the pie tins! What did you need to use for this?
Just regular muffin tins for the key lime + mini cheesecakes. And one mini muffin tin for the chocolate-vanilla bites!
